A Little Bit of Everything!

Hey Guys & Gals! 

Well, I'm really starting to love this "baseball wife" thing. Each day I meet someone new, and as a people person, I really enjoy this! This morning 6 baseball wives (including myself) hiked up Squaw Peak. It was a hefty climb--so challenging, yet so rewarding (and full of good girl talk). I got a sunburn at 8am...that's how you know you're in AZ! :) 


Garrett golfed with the guys this afternoon (he shot an 80 AND didn't lose a ball AND didn't hit it in the bunker AND got an Eagle--a few "firsts" for him on the golf course), so I cooked dinner for him and a couple guys tonight, cleaned up our apartment, and did 4 loads of laundry! Between Garrett's everyday life and baseball life and my workout life and everyday life we go through a LOT of clothes! Our apartment feels more like home every day. My parents are coming FRIDAY, and Garrett and I have the whole trip planned out. We are very excited--and busy getting everything ready for their arrival!

Garrett's arm is feeling great so far! He's had some solid bullpens, and has thrown well during live BP. Spring training games for the minor league side will start up in the next week or two (I can't wait for games)! I'm really proud of his hard work & passion for baseball. I feel so blessed to be on this baseball adventure with him, as his best friend and #1 fan!

I've picked up a new hobby--cooking! I love to try new recipes, and have been into this whole "freezer meal" thing. It is Garrett and I's goal not to eat out very often. The cost of it really adds up! I'm enjoying the challenge of cooking as many meals as possible, for the least expensive grocery bill as possible. If any of you blog readers have some good recipes send them my way! :) I had a request from a baseball wife to post some of my favorites on my blog. So here's the recipe of the day (it's what I made for dinner tonight): 


Enchilada Casserole
From: my sweet, loving, and adorable Grandma Funk

Ingredients: 
1 lb. lean ground beef
1/2 tsp. salt, 1/8 tsp. pepper
1/4 tsp. oregano
1/8 tsp. marjoram 
1/3 c. chopped onion
1/3 c. sliced ripe olives 
1 can 10oz. mild red enchilada sauce
1 can 15oz. tomato sauce
6-8 corn fajita size tortillas 
1 package shredded cheddar cheese

Brown beef (add salt and pepper while browning). Add next 6 ingredients (oregano, marjoram, chopped onion, sliced ripe olives, mild red enchilada sauce, tomato sauce). Simmer for 10 minutes. Cut tortillas into quarters; layer meat sauce, tortillas, and cheese in a 9 by 13 glass baking dish (like you would do for lasagna). Bake at 350 degrees for 40 minutes. If it gets dry, cover with foil for the last 15 minutes. I served it over shredded lettuce, and had sour cream, salsa, corn, chips, and bean dip as sides! :) The guys loved it, and I hope you do too!

Our relaxed life in Glendale...

Dear Family & Friends,

Thanks for your positive feedback with my new blog! Things are "slow" here in AZ, as Garrett (and I) are anxiously awaiting Spring Training games to begin! We've got a pretty relaxed schedule right now--which we are thankful for. We wake up, and head to the field every morning at 7am. I work out with Melissa (a baseball wife), have lunch, and pick up Garrett around 1 each day. Then we have the rest of the day/evening to be together--we're finding that "free" things to do are hard to come by in Glendale. 

We are very excited to host our first guests of the season--my parents! :) They'll be here Friday-Monday, and we've got a fun itinerary planned! It will be nice to have some familiar faces here! 

Last night Garrett got his sushi fill in Westgate at Kobuki. I just kept him company. :) I'm excited to enjoy God's beautiful Arizona creations in the morning on a hike! 

I'm headed to my fitness class, "Body Pump." I'll post again in a couple days!

& the baseball adventure begins...

Well, on Valentine's Day Garrett and I packed up our car and headed to Phoenix! After an apartment fiasco (it's hard to book things online), we found a nice one to make "home" for Spring Training. We will be here until the first week in April. 

I'm learning how to keep myself busy (hints, I started blogging), and how to best support Garrett as a "baseball wife." This lifestyle is teaching me how to trust in God's plan--and to let go of trying to control everything that happens. It's baseball. The world of unknowns & adventure! I'll try and update my blog a couple times each week! I'll post about life and baseball--to keep you all updated on our journey this season!
